27 spring/summer 2020 Your family will enjoy making (and eating!) these cool little treats. Make ahead of time and freeze for your Backyard Campout or any event. T i m e -f o r -T e a C o o k i e s Prep time: 20 minutes Bake time: 10 - 15 minutes 2 cups granulated sugar 1 cup unsalted butter 2 eggs 4 cups all-purpose flour 1/4 teaspoon salt 1 tsp nutmeg 1/4 cup buttermilk 1 teaspoon baking soda 1 teaspoon vanilla 1/8 teaspoon butter flavoring (optional) Cream together butter, sugar and eggs. In a separate bowl sift together flour, salt and nutmeg. Blend flour mixture into sugar mixture. In a small cup, mix together buttermilk and baking soda. Add to dough and add vanilla and butter flavoring. Turn out onto floured surface. Roll dough to 1/4 inch and cut into circles (using the edge of a tea glass or biscuit cutter). Sprinkle tops with Turbinado sugar. On a lightly greased cookie sheet, bake at 400° for 10 - 15 minutes or until light brown. Do not over bake. I c e C r e a m A s s e m b l y Using your favorite, softened ice cream, add a scoop to form your sandwich. Press gently and take care not to break the cookies. G a r n i s h e s Roll edges in sprinkles, Mini M&Ms, crushed Oreo cookies, chopped nuts, or chopped peppermint patties. Wrap each in plastic wrap and freeze.
